The avocado is a small fruit that packs a mighty flavor punch.
It’s silky, buttery, and reminiscent of an egg yolk. Avocados are often used in Mexican cuisine, but are versatile. It’s high in fiber, vitamins K, C, and B, and is also a good source of antioxidants. The one downside is the fat content – 1 cup has 21 grams- but these are classified as healthy fats, so you don’t have to feel guilty when you eat one.
Because of its health benefits, avocados are easy lunch option because the fat and fiber help keep you full – and all you have to do is slice one open. I have a simple lunch idea this week: Avocado Toast with Smoked Salmon & Capers. You could make a smaller version of this and serve it as an appetizer at a party. While this is high in fat, it has so many other health benefits. The salmon is a great source of omega-3s, another healthy fat.
This quick bite is gorgeous and delicious. It’s a great dish for a high tea, or a small gathering of lady friends on a hot summer day, sipping a little wine. Enjoy!
Avocado Toast with Smoked Salmon & Capers
Serves 1
1 large slice of French bread or half ciabatta roll
Half a small avocado
2 teaspoons fresh lemon juice
Salt and pepper
2 ounces smoked salmon
6 capers
Drizzle of horseradish sauce
Slice avocado in half, mash it with a fork, add lemon juice and salt and pepper to taste. Toast the bread and spread the avocado mash over the bread. Crumble the salmon over the avocado and top with capers and desired amount of horseradish sauce. Serve immediately.
