
Two weeks ago, I told my husband it’s been a great year for watermelons and I think I jinxed myself because ever since, I’ve brought home pale melons.
But when life gives me lackluster melons, I make luscious food. I found a way to transform a mediocre melon into delicious fare. I made watermelon salsa which is perfect for a disappointing melon because the savory elements in the dish add plenty of flavor .
This is an excellent salsa, and a good option for anyone who doesn’t eat tomatoes because of the acid. If you have a nightshade intolerance, this is an excellent substitute for traditional salsa because it doesn’t have tomatoes or peppers.
It’s so easy to make and incredibly refreshing! I highly recommend it.
Watermelon Salsa
2 cup diced watermelon
1 teaspoon lime juice
2 tablespoons chopped cilantro
1 green onion, sliced
1 tablespoon minced red onion
¼ teaspoon cumin seed
1/4 teaspoon seasoned salt
Combine all ingredients in a bowl. Stir and serve with tortilla chips.
